Ribs Boiling Ingredients

  • 1kg Pork spare ribs
  • 10 whole garlic cloves
  • 1 Tbsp soybean paste
  • A little bit of sesame seeds (for garnish)

Soy Sauce Marinade Ingredients

  • 9 Tbsp soy sauce
  • 4 Tbsp sugar
  • 4 Tbsp corn syrup (or rice syrup)
  • 2 Tbsp plum extract (maesilcheong)
  • 4 Tbsp cooking wine (mirin or cheongju)
  • 2 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 3.5 cups water (using a standard paper cup)
  • A little bit of sesame seeds (for topping)

Cooking Instructions

First, it’s important to remove the blood from the ribs. Soak the pork ribs in cold water for about 1 hour to drain out the blood. Changing the water once or twice during this time will help to remove the blood more thoroughly.

After soaking and draining, pat the ribs dry with paper towels. Make several shallow cuts into the meat between the bones. These cuts will help the marinade penetrate better and ensure the ribs are more tender when cooked.

Now, let’s make the delicious soy sauce marinade. In a large bowl, combine the soy sauce, sugar, corn syrup, plum extract, cooking wine, minced garlic, and sesame oil. Stir well until the sugar is dissolved. Set aside. (Do not add sesame seeds at this stage; they are for garnish later.)

This step is to remove any gamey smell and tenderize the ribs. Place the ribs in a pot and add enough water to cover them. Dissolve the soybean paste in the water. Bring the water to a rolling boil, then add the ribs and blanch for about 10 minutes. After blanching, rinse the ribs thoroughly under cold water and drain them in a colander.

Now we’ll combine all the ingredients to create the perfect braised ribs! In a deep pot, place the blanched ribs, whole garlic cloves, and the prepared soy sauce marinade. Pour in 3.5 cups of water. Cover the pot and simmer over medium heat for about 40 to 50 minutes, allowing the ribs to braise. Stir the ribs occasionally to ensure the marinade coats them evenly. Once the sauce has reduced and the ribs are glossy, turn off the heat. Sprinkle with sesame seeds for a beautiful finish. Your delicious braised pork ribs are ready!
