  • 2 medium fresh potatoes
  • 1/2 medium onion
  • 1/3 medium carrot
  • 1 tsp minced garlic
  • 2 Tbsp cooking oil
  • 1 Tbsp curry powder
  • 1 Tbsp chopped green onion
  • 1 tsp salt (or adjust to taste)
  • 2 Tbsp toasted sesame seeds

First, wash the 2 potatoes thoroughly, peel them, and then cut them into julienne strips about 0.5cm thick. If they are too thin, they might break apart easily when stir-frying, so cutting them to an appropriate thickness is recommended.

Soak the julienned potatoes in cold water for about 5 minutes. This process removes the surface starch from the potatoes, preventing them from sticking together and ensuring a neat stir-fry.

Drain the potatoes completely after removing the starch. Then, add 1/2 Tbsp of salt and gently mix them. Let them sit for about 10 minutes to lightly cure. This step seasons the potatoes, making them tastier, and helps them maintain their shape without breaking apart during cooking.

Julienne the 1/2 onion and 1/3 carrot to a similar thickness as the potatoes. Mince the garlic and finely chop the green onion. Slice the carrot thinly, similar to the potatoes, so they cook at a similar rate and add nice color.

When the potatoes start to look translucent and are almost cooked through, prepare to add the curry powder. If the potatoes are still firm, cook them a little longer.
