Just like the protagonist in the movie ‘Little Forest’ said, ‘Sweet, seasonal cabbage tastes best raw,’ this recipe brings out the fresh, natural flavor of cabbage. Make this healthy and delicious sandwich at home for a simple yet satisfying meal or brunch.

Ingredients

  • 1/4 medium fresh cabbage
  • 4 slices of soft bread
  • 3 room-temperature eggs
  • Mayonnaise, to taste (adjust as needed)
  • Salt, a pinch (for seasoning)
  • Black pepper, a pinch (for flavor)
  • Wholegrain mustard sauce (optional, a little)

Cooking Instructions

Step 1

Boil the 3 eggs, which have been brought to room temperature, for about 12-15 minutes until fully hard-boiled. This ensures the yolks are firm and perfect for making the sandwich filling.

Wash the cabbage thoroughly and pat it dry. Shred it as thinly as possible. For an extra crisp texture, soak the shredded cabbage in cold water for a few minutes, then drain very well before use.

Take two of the bread slices and spread a thin layer of wholegrain mustard sauce on one side, if using. This step is optional; you can skip it or use a different spread.

Peel the hard-boiled eggs and finely chop them with a fork or knife. Place the chopped eggs in a bowl and mix with mayonnaise until smooth and well combined.

Add the shredded cabbage to the egg and mayonnaise mixture from step 3. Add a little more mayonnaise if needed to bind everything together. Taste and adjust the seasoning with salt and pepper as necessary.
