Once steam starts to rise, reduce the heat to medium and simmer for about 5 minutes until the bean sprouts are crisp yet cooked. Be careful not to overcook them, as they can become mushy.

It’s important to maintain the kelp’s tender texture. Place the kelp in a bowl with 1 cup of water and gently swish to remove any impurities. Then, lightly squeeze out the excess water. Be gentle when squeezing to avoid crushing the kelp.
