As the weather warms up, a steaming bowl of Samgyetang, perfect for boosting energy, naturally comes to mind. Whether it’s for a special occasion or when you feel depleted, you can easily and quickly make a wonderful Samgyetang with just a pressure cooker. Today, we’re introducing a recipe for ‘Abalone Samgyetang,’ made even richer and more flavorful with the addition of precious abalone. Served alongside Hawaiian Red Salt, it becomes a special meal that enhances both taste and presentation. Let’s start replenishing your vitality this summer, easily!
Main Ingredients- 2 young chickens
- 5-6 abalones
- 1/2 cup glutinous rice
- 1 packet Samgyetang herbal soup kit
- 5-6 cloves garlic
- 5-6 red dates (jujubes)
- 5-6 ginkgo nuts
Seasoning & Others- Chopped green onions (for garnish)

Cooking Instructions
Step 1
Rinse the chickens thoroughly under running water. Remove any blood and rinse the inside of the chicken clean.
Step 2
Trim away the yellow fat from the chicken skin and the tail section to prevent the broth from becoming too greasy. Removing fatty parts results in a cleaner, more refreshing taste.
Step 3
Wash the glutinous rice and soak it in water for about 10 minutes. Soaking the rice will make the filling inside the chicken softer and chewier.
Step 4
Scrub the abalones thoroughly with a brush or toothbrush, cleaning both the shell and the meat, as well as the surface. The difference between before and after cleaning will be clear, as shown in the photo. (Left: cleaned abalone, Right: abalone before cleaning)
Step 5
Stuff the cavity of the prepared chicken with the soaked glutinous rice, cleaned red dates, whole garlic cloves, and ginkgo nuts. Adding dried chestnuts or astragalus root is also a great option.
Step 6
Using a pre-made Samgyetang herbal soup kit makes it easy to achieve a deep broth flavor. These kits typically contain ingredients like oak wood, astragalus root, and red dates, adding an aromatic and healthy dimension to your soup.
Step 7
Place the stuffed chicken (2), the herbal soup kit, and the cleaned abalones into the pressure cooker. Add enough water to cover the chicken.
Step 8
Select the ‘Samgyetang’ or ‘Baeksuk’ (boiled chicken soup) setting on your pressure cooker. Cooking for approximately 70 minutes will ensure the chicken is tender and the broth is rich. (Cooking time may vary depending on your pressure cooker model.)
Step 9
Once cooking is complete, carefully open the pressure cooker lid. Ladle the beautifully finished Abalone Samgyetang into bowls. Garnish with chopped green onions, Hawaiian Red Salt, and a pinch of pepper for a delicious finish!
