But with the Star Pickup pork neck Yukgaejang recipe, you just grill the pork neck, chop it finely, season it, and boil it – it’s incredibly easy! This recipe offers a rich, spicy broth and tender pork neck, making it a truly satisfying meal. The grilling step infuses the pork with a wonderful depth of flavor before it’s simmered, and the overall process is straightforward, perfect for beginner cooks.   • Blanched fernbrake 1 pack (approx. 200g)
  • Green onion 1 stalk (thickly sliced, focusing on the white part)
  • Beef bone broth (store-bought) 1L

Seasoning Ingredients

  • Minced garlic 1 Tbsp
  • Anchovy sauce 2 Tbsp
  • Cooking wine (Mirin, etc.) 1 Tbsp
  • Soy sauce 1 Tbsp
  • Gochugaru (Korean chili flakes) 4 Tbsp
  • Cooking oil, a little

Cooking Instructions

Step 1

Lightly oil a pot and grill about 3 pieces (200g) of pork neck over medium heat until golden brown. This step seals in the juices, ensuring the pork remains tender and flavorful.

Once the pork neck is nicely browned, chop it into small pieces directly in the pot. This helps the meat integrate well with the oil released during cooking when making the chili oil.

Remove the grilled pork temporarily. Keeping the rendered pork fat in the pot, add 4 Tbsp of gochugaru (Korean chili flakes) and stir-fry over low heat to create fragrant chili oil. Stir for about 1 minute, being careful not to burn the flakes.

To the chili oil, add 1 Tbsp minced garlic, 1 Tbsp cooking wine, and 2 Tbsp anchovy sauce. Stir-fry together over low heat. Sautéing the seasonings this way deepens the flavors and enhances the umami of the ingredients.

Add the prepared blanched fernbrake (1 pack) and mix well with the seasoned ingredients, sautéing briefly. The chewy texture of the fernbrake will add another delightful dimension to the Yukgaejang.

Pour in 1L of store-bought beef bone broth. Stir to combine all ingredients and seasonings, then bring to a boil over high heat. Once boiling, reduce to medium-low heat and simmer for about 10 minutes to allow the flavors to meld beautifully.
