Main Ingredients

  • 6 sausages
  • 1 piece of oyster mushroom
  • 1/2 pack of enoki mushrooms
  • 1/4 carrot
  • 1 Korean green chili pepper
  • 1/2 tomato
  • 1 bowl of warm cooked rice
  • 2 eggs

Seasoning

  • 1 Tbsp soy sauce
  • 1 Tbsp Pad Thai sauce (or oyster sauce/soy sauce if unavailable)
  • Sesame seeds, to taste

Cooking Instructions

Step 1

Blanch the sausages in boiling water for a minute to remove impurities, then drain them. This step helps to achieve a cleaner taste.

Wash and peel the carrot, then julienne it thinly. The crisp texture of the carrot will enhance the flavor of the fried rice.

Remove the stem from the tomato and slice it thinly, about 0.5 cm thick. Trim the base of the oyster and enoki mushrooms and chop them roughly. Remove the seeds from the Korean green chili pepper and slice it into 0.5 cm pieces. You can also slice the sausages into 0.5 cm thick rounds.

Heat a generous amount of cooking oil in a wok or large skillet over medium heat. Add the julienned carrots and stir-fry for about 1 minute until slightly tender. Then, add the chopped oyster mushrooms, enoki mushrooms, and sausages. Continue to stir-fry for 2-3 minutes until everything is lightly browned and fragrant.

Add the sliced Korean green chili pepper and tomato to the wok. Stir-fry for another minute, just until the vegetables are slightly softened. Be careful not to overcook, as this can release too much moisture.

Push the cooked vegetables and sausages to one side of the wok. Add the warm cooked rice to the empty space.

Crack the eggs into a bowl, beat them to remove the chalaza, and pour them over the rice. Drizzle 1 tablespoon of soy sauce and 1 tablespoon of Pad Thai sauce evenly over the rice. If you don’t have Pad Thai sauce, soy sauce or oyster sauce will work well.

Once the eggs begin to set, gently mix them with the rice using chopsticks or a spatula, scrambling them as they cook. It’s important to break up the rice grains so they don’t clump together.

Now, stir everything together and continue to stir-fry for another 1-2 minutes, allowing the sauce to be absorbed by the rice and vegetables until it becomes fluffy and fragrant. Finally, sprinkle with sesame seeds for an extra nutty aroma. Your delicious Sausage and Vegetable Fried Rice is ready!
