Main Ingredients

  • 300g well-fermented Napa cabbage kimchi
  • 3-4 frankfurter sausages
  • 1 large can of Spam
  • 1/2 stalk of green onion
  • 2-3 Cheongyang chili peppers (for spicy kick)

Seasonings & Others

  • 1 tsp minced garlic
  • 1 tsp sugar (to balance the kimchi’s sourness and enhance flavor)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare your well-fermented Napa cabbage kimchi. Chop the kimchi into bite-sized pieces and place it into a pot. If your kimchi is too sour, adding a little sugar can help balance the flavor.

Slice the frankfurter sausages and Spam into bite-sized pieces, similar to the kimchi or according to your preference. Open the Spam can and cut it into desired shapes.

Slice the green onion diagonally or chop it finely. If you like it spicy, add the Cheongyang chili peppers, chopped finely, adjusting the amount to your liking.

Pour water or broth (like anchovy broth or beef bone broth for extra richness) into the pot with the kimchi. Bring it to a rolling boil over high heat until the kimchi softens.

Once the stew is boiling vigorously, add the sliced sausages and Spam. Stir in the minced garlic and black pepper to enhance the aroma. Continue to boil over high heat for about 10 minutes, allowing the flavors of the ham and kimchi to meld together.

Finally, add the sliced green onions and Cheongyang chili peppers. Simmer for another 2-3 minutes. Taste the broth and adjust the seasoning: add soy sauce or salt if it’s too bland, or a little water if it’s too salty.
