Main Ingredients

  • 5 Frank sausages
  • 6 cups Rice
  • 2 Carrots
  • 5 Eggs
  • 10 Pickled radish strips (danmuji)
  • 10 Gim sheets (seaweed for kimbap)
  • 10 Sliced cheese slices
  • 20 Perilla leaves (kkaennip)
  • 10 Strips of bacon

  • Sesame oil
  • Sesame seeds
  • Grapeseed oil

Cooking Instructions

Step 1

Prepare all ingredients in advance. You’ll need 6 cups of rice, 5 eggs, 10 sheets of gim, 5 frank sausages, 10 strips of smoked bacon, 20 perilla leaves, 2 carrots, 10 slices of cheddar cheese, and 10 pieces of pickled radish. For seasoning and cooking, have salt, sesame oil, sesame seeds, and grapeseed oil ready.

Measure out 6 cups of rice and rinse it thoroughly. Cook the rice with slightly less water than you normally would for a firmer texture. While the rice is cooking, season the cooked rice with salt, sesame oil, and sesame seeds, mixing well. Let the seasoned rice cool down slightly before using.

While the rice is cooking, prepare the other ingredients. Crack 5 eggs into a bowl, add a pinch of salt, and whisk well. Heat a bit of grapeseed oil in a frying pan over low heat and cook the eggs into thin omelets. Once cooked, let them cool slightly, then thinly slice them into strips for the kimbap.

Cut each of the 5 frank sausages lengthwise in half. Lightly oil a frying pan and grill the sausage halves over low heat until golden brown. This step enhances the sausage’s flavor and aroma.

Grill the 10 strips of smoked bacon in a dry pan until crispy. The bacon’s own fat is sufficient for cooking, so no additional oil is needed. Once cooked, place the bacon on paper towels to absorb excess grease.

Thinly slice the 2 carrots diagonally first, then julienne them into fine strips. Season the carrot strips with 3 pinches of salt and gently massage to draw out some moisture. Heat a bit of grapeseed oil in a pan and stir-fry the carrots over low heat until they are slightly softened. All your filling ingredients are now ready!

Place a sheet of gim on a kimbap rolling mat, shiny side down. Spread a moderate amount of the seasoned rice evenly over the gim, leaving a small border at the top edge. Be careful not to overfill, as this can cause the kimbap to burst when rolled. Next, layer two perilla leaves on top of the rice. The perilla leaves will add a fresh aroma and help protect the gim from moisture.

Prepare the sliced cheese. Before peeling the cheese slice, gently score it in half with the back of a knife. Peel the wrapper and place the halved cheese slice onto the kimbap ingredients.

Place one half of a grilled frank sausage lengthwise in the center of the kimbap ingredients. Positioning the sausage in the middle will help create a neat shape when rolled.

Lay one strip of the crispy cooked bacon alongside the sausage. The salty and savory bacon will add another layer of deliciousness to your kimbap.
