Tender Braised Pork Ribs for the Whole Family

Main Ingredients

  • 500g Pork ribs for braising
  • 1 stalk Green onion
  • 1 Carrot
  • 2 King oyster mushrooms
  • 2 Shiitake mushrooms

Flavorful Braising Sauce

  • 1/2 cup Soy sauce (approx. 100ml)
  • 2 Tbsp Mirin or cooking sake (approx. 30ml)
  • 2 Tbsp Granulated sugar (approx. 30g)
  • 1 Tbsp Corn syrup or Oligosaccharide (approx. 15ml)
  • 1 Tbsp Sesame oil (approx. 15ml)
  • 1 Tbsp Minced garlic (approx. 15g)
  • 1/2 cup Apple juice (approx. 100ml)
  • 1 Tbsp Toasted sesame seeds (approx. 5g)
  • 1/2 Tbsp Black pepper (approx. 2-3g)

Cooking Instructions

Step 1

First, it’s important to remove the blood from the pork ribs. Soak them in cold water for about 30 minutes to 1 hour to drain the blood. If you have more time, soaking for about 3 hours will yield an even cleaner taste. Changing the cold water midway can help speed up the process. (Tip: After draining, rinsing the ribs under running water once more is recommended for a cleaner result.)

While the ribs are soaking, let’s make the delicious braising sauce! In a bowl, combine 1/2 cup soy sauce, 2 Tbsp mirin, 2 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp sesame oil, and 1 Tbsp minced garlic. Mix them well. Then, add 1/2 cup apple juice, which adds a wonderful depth of flavor to the braised pork ribs, and a pinch of black pepper. Mix again until well combined – your braising sauce is ready! Pour this sauce over the drained ribs and gently massage it in.

It’s best to let the marinated ribs rest for at least 1 hour. If you have ample time, marinating them in the refrigerator for half a day will allow the flavors to penetrate more deeply, resulting in a richer taste. Even if you’re in a hurry, we recommend marinating for at least 1 hour. (Tip: Before marinating, making shallow cuts in the ribs will help the sauce absorb better and make the meat more tender when cooked.)

While the ribs are marinating, prepare the other ingredients. Peel the carrot and slice it into rounds about 1.5cm thick. Lightly wash the king oyster and shiitake mushrooms under running water and cut them into large pieces. Chop the green onion into large pieces, about 2-3cm long. (Tip: You can also cut the carrots or mushrooms into cute shapes for children.)

Now it’s time to cook everything in a pressure cooker! Add the marinated pork ribs, prepared carrots, mushrooms, and green onions to the pressure cooker. Make sure to pour in all the remaining marinade. Using a pressure cooker has the advantage of distributing the seasoning evenly without needing to stir multiple times, and most importantly, it cooks the meat to incredible tenderness. If you don’t have a pressure cooker, you can use a regular pot, but the cooking time may be longer.

Cook under medium pressure for about 20 minutes. You can also use the braised ribs function on an electric rice cooker. After cooking, when you open the lid, you’ll notice that the liquid hasn’t reduced much due to the nature of pressure cooking.

While it’s delicious as is, I like to transfer the ribs to a pot and simmer them further. This allows the sauce to penetrate the meat more deeply and achieve a desirable consistency. Simmer over medium-low heat until it reaches your preferred thickness. Finally, sprinkle with toasted sesame seeds for a nutty aroma, and your perfect braised pork ribs recipe is complete!
