Sweet potatoes are delicious steamed, but it’s easy to end up with a whole box! This is the perfect time to make a smooth and savory sweet potato cream soup. It makes a satisfying meal or a healthy snack. Here’s the ultimate winter recipe, bursting with sweetness and creaminess.
Main Ingredients- 500g sweet potatoes (recommend using moist, orange-fleshed varieties like Beauregard)
- 1000ml milk
- 1/2 medium onion, thinly sliced
- 1 knob of butter (about 10g)
Seasoning & Others- 1 tsp salt (adjust to taste)

Cooking Instructions
Step 1
First, prepare the sweet potatoes. Using Beauregard or similar sweet potatoes will add a natural sweetness, making the soup even more delicious. Wash the sweet potatoes thoroughly, place them in a steamer, and cook for about 20-25 minutes after the steam starts. They should be tender enough to be easily pierced with a fork. Proper cooking ensures they mash easily.
Step 2
Once the sweet potatoes are well-cooked, peel them while they are still warm. Place the peeled sweet potatoes in a bowl and mash them smoothly using a spatula or a potato masher. Since they are fully cooked, they should mash without many lumps. If there are still some small lumps, don’t worry, as we’ll be using a blender in the next step.
Step 3
Peel and thinly slice half an onion. Melt a knob of butter in a pot over low heat, then add the thinly sliced onions. Sauté them slowly, being careful not to burn them.

Continue to cook over low heat, stirring gently, for about 5-7 minutes, until the onions become translucent and start to sweeten. Sautéing the onions well will significantly deepen the flavor of the soup. If the onions seem to be browning too quickly, reduce the heat to very low or briefly remove the pot from the heat.

The onions are now soft and sweet. This stage is crucial for developing the soup’s rich flavor profile.
Step 6
Pour 500ml of milk into the pot with the sautéed onions. Use an immersion blender or a regular blender to purée the mixture until smooth. If your mashed sweet potatoes still have lumps, you can add them now and blend them together for an extra smooth texture. If you don’t have a blender, you can finely mince the onions, sauté them well, and then add the mashed sweet potatoes to the pot to simmer.
Step 7
Return the puréed onion and milk mixture to the pot and bring it to a simmer over medium heat. Once it begins to simmer, reduce the heat to low.
Step 8
While the mixture is simmering, slowly pour in the remaining 500ml of milk. Then, add all the mashed sweet potatoes and stir well to combine.
Step 9
Continue to simmer over low heat, stirring occasionally, for another 5-10 minutes until the sweet potato is fully incorporated and the soup reaches a smooth, creamy consistency. Stir in 1 teaspoon of salt to season (adjust to your preference). Continue simmering briefly until the desired consistency is achieved. Your delicious sweet potato soup is ready!
