Main Ingredients- 3 medium boiled sweet potatoes
- 1/4 medium onion
- 1 tbsp unsalted butter
- 250-300ml milk
- 1 slice processed cheese
- 2 pinches salt
- Pinch of parsley flakes (for garnish)
Cooking Instructions
Step 1
First, to create a wonderfully smooth sweet potato soup, peel the boiled sweet potatoes. It’s easier to peel them while they are still warm from boiling.
Step 2
Once peeled, mash the sweet potatoes thoroughly using a fork or a potato masher until there are no lumps. This will enhance the sweet flavor and create a velvety texture.
Step 3
Thinly slice 1/4 of a medium onion. The sweetness and aroma of the onion will add a delightful depth of flavor to your soup.
Step 4
Now, heat a pot over medium heat and add 1 tablespoon of unsalted butter, allowing it to melt slowly.
Step 5
Once the butter is fully melted, add the thinly sliced onions. Reduce the heat to medium-low and sauté the onions until they become translucent and release their sweet fragrance.
Step 6
Continue to sauté the onions until they are lightly golden and fragrant, being careful not to let them burn. This step caramelizes the onions, bringing out their natural sweetness.
Step 7
When the butter and onions are nicely sautéed and have a light golden hue, add the mashed sweet potatoes to the pot. Stir well with a spatula and cook together for about 1 minute, allowing the flavors of the sweet potato and onion to meld.
Step 8
Now, slowly pour in 250ml to 300ml of fresh milk. You can adjust the amount of milk to achieve your desired soup consistency. Use more milk for a thinner soup.
Step 9
Using an immersion blender (or a regular blender), blend the soup until it is very smooth. If you prefer a soup with a little texture, you can blend it slightly less. For an ultra-smooth consistency, blend until completely puréed.
Step 10
Pour the puréed sweet potato soup back into the pot and bring it to a simmer over medium heat. Stir continuously with a spatula to prevent it from sticking to the bottom. Let it simmer gently for about 3-4 minutes.
Step 11
Once the soup has thickened slightly and reached your desired consistency, add two pinches of salt to season. Taste and adjust the salt as needed.
Step 12
Finally, add 1 slice of processed cheese to the soup. Stir gently while it simmers until the cheese is completely melted. The cheese adds a wonderful creaminess and rich flavor. Continue to cook and stir for another 1-2 minutes until well combined.
Step 13
Ladle the warm sweet potato soup into a serving bowl. Garnish with a sprinkle of parsley flakes for a beautiful presentation. This delicious soup pairs wonderfully with freshly baked bread or croutons!
