Enjoy this comforting bean sprout soup, perfect served piping hot or chilled on a warm summer day. For a touch of spice, feel free to add more chili peppers or a pinch of red pepper flakes. This simple yet satisfying soup is a staple for a reason!
Main Ingredients- 300g bean sprouts
- 50g green onion (about 1/4 stalk)
- 1 Korean green chili pepper
- 1.3L water
Seasoning & Flavorings- 1 Tbsp minced garlic
- 1 Tbsp tuna extract (or substitute with soy sauce for soup)
- 4 Tbsp soy sauce for soup
- 2 tsp Dashida (Korean soup stock powder – anchovy/kelp flavor recommended)

Cooking Instructions
Step 1
First, rinse the bean sprouts under running water and carefully check for any wilted sprouts or foreign objects. Removing any bad sprouts will ensure a clean-tasting broth.
Step 2
Place the cleaned bean sprouts in a bowl and add water. Gently swish and rinse them 2 to 3 times. Rinsing until the water runs clear will yield an even better result.
Step 3
After rinsing, place the bean sprouts in a colander to drain excess water thoroughly. Draining well helps reduce any ‘fishy’ smell when cooking.
Step 4
In a deep pot, pour in 1.3L of water and add the drained bean sprouts.
Step 5
Cover the pot with a lid and bring it to a boil over high heat. Once steam starts to escape and it begins to boil, you can adjust the heat.
Step 6
While the soup is boiling, thinly slice the green onion into rounds (about 0.5cm thick). For the green chili pepper, remove the seeds and slice it diagonally (about 0.3cm thick). If you prefer more heat, you can leave the seeds in.
Step 7
Once the soup starts boiling and steam is visible, open the lid. Add the minced garlic, sliced green chili pepper, soy sauce for soup, tuna extract, and Dashida. Let it simmer over medium heat until the broth becomes clear and flavorful.
Step 8
Finally, add the sliced green onion and simmer for just a moment longer until done! Avoid overcooking after adding the green onion to maintain its crisp texture. Enjoy your delicious bean sprout soup!
