Cooking Instructions
Step 1
Melt 1 Tbsp of butter in a pot over medium-low heat. Add the thinly sliced onion and sauté for at least 5 minutes until softened and translucent. Cooking the onions thoroughly will bring out their natural sweetness.
Step 2
Once the onions are lightly golden, add the crushed whole tomatoes, the large pieces of white fish fillet, and 3 Tbsp of mirin. Stir gently to avoid breaking up the fish pieces as they cook.
Step 3
Pour in 250ml of heavy cream and 2 Tbsp of tsuyu (soy sauce-based seasoning). Stir well to combine. Simmer gently over medium heat for about 5 minutes, allowing the soup to thicken slightly and the flavors to meld. (If using optional shrimp or mussels, add them at this stage to cook through.)
Step 4
Finally, stir in the chives cut into 5cm lengths. Season with salt and pepper to your preference. Cook for just 1 more minute until the chives are slightly wilted. Your comforting Swedish Fish Soup is ready to be enjoyed immediately while warm!
