Skate Roe Salad Dressing

  • Gochujang (Korean chili paste) 6 Tbsp
  • Gochugaru (Korean chili flakes) 10 Tbsp
  • 4x Concentrated Vinegar 8 Tbsp
  • Sugar 4 Tbsp
  • Oligosaccharide syrup 4 Tbsp
  • Salt 1 tsp
  • Fish Sauce (Anchovy) 1 Tbsp
  • Minced Garlic 4 Tbsp
  • Minced Ginger 2 tsp

First, prepare 1.2kg of skate roe (this is usually sold in two 600g packs, often pre-cut). If using frozen skate roe, ensure it is completely thawed before proceeding. Incomplete thawing can affect the texture.

Here’s a secret to tenderizing the skate roe and removing any gamey odor: marinating it in cider! Cut the thawed skate roe into bite-sized pieces. Place the cut pieces in a bowl and pour enough cider (1 can, 355ml) to cover them. Add a little salt for initial seasoning. Let it marinate for at least 3 hours; this will make the skate incredibly tender.
