Main Ingredients- 1/2 can sweet corn (drained)
- 1/4 onion (finely diced)
- 1 tomato (cut into bite-sized pieces)
- Generous amount of mozzarella cheese (adjust to your preference)

Cooking Instructions
Step 1
First, finely dice 1/4 of an onion. Aim for small, consistent pieces so they cook down nicely. In a pan, melt 1 knob of butter over low heat. Once melted, add the diced onion and 2 tablespoons of minced garlic. Sauté until the onion becomes translucent and fragrant, releasing a sweet aroma.
Step 2
Once the onion and garlic are well sautéed and fragrant, prepare your canned corn. Drain 1/2 can of sweet corn thoroughly using a sieve, then add it to the pan. Season with a pinch of salt and a dash of black pepper. (Be mindful of the corn’s natural saltiness and add salt gradually).
Step 3
Add 1 tomato, cut into bite-sized pieces, to the pan. Stir-fry with the corn until the tomato softens slightly and becomes tender. Gently mix to avoid breaking down the tomato too much.
Step 4
After all the ingredients are well combined and sautéed, it’s time to generously top with mozzarella cheese. Sprinkle a good amount to cover the mixture evenly. Cover the pan or maintain low heat and allow the cheese to melt slowly into a gooey delight.

Once the mozzarella cheese is melted and slightly golden, and everything is beautifully combined, your delicious corn cheese is ready! Turn off the heat and serve directly from the pan, or transfer it to a nice serving dish.
