Acorn Jelly Ingredients- 1 cup acorn powder
- 6 cups water
Basic Seasoning- 1/2 tsp salt
- 1/2 tsp sesame oil
- 1/2 tsp salt

Cooking Instructions
Step 1
In a wide pot, combine 6 cups of water, 1/2 teaspoon of salt, 1/2 teaspoon of sesame oil, and 1 cup of acorn powder. Turn the heat to high and whisk continuously to ensure the acorn powder dissolves evenly without lumps. It’s crucial that the acorn powder is well-mixed into the water from the start.
Step 2
Once the mixture begins to boil vigorously (you’ll see it bubble up), reduce the heat to medium. Continue stirring in one direction to prevent the jelly from sticking to the bottom of the pot. Keep stirring until the mixture thickens and feels sticky. Then, lower the heat to low and let it gently cook for about 10 minutes, stirring occasionally as if steeping. This slow cooking process develops the signature chewy texture of Dotori Muk. Your delicious acorn jelly is almost ready!
Step 3
Carefully pour the cooked acorn jelly mixture into a square glass container. Be cautious as it will be hot. Allow the jelly to cool completely at room temperature. It’s important not to refrigerate it immediately, as this can make the jelly firm and lose its delicate texture. Cooling at room temperature results in a softer, more yielding jelly. Acorn jelly doesn’t spoil easily, so it’s often best stored at room temperature and enjoyed fresh. You can simply cut off the amount you need for each serving. To make cleaning easier, fill the pot used for cooking with water immediately after pouring out the jelly, allowing any residue to soak before washing.

Prepare a delicious seasoning sauce to serve with your homemade acorn jelly.
