Crispy Homemade 100% Real Shrimp Crackers

As the weather gets warmer, a cold beer becomes even more appealing. After putting the kids to bed, sometimes a simple beer is enough to unwind without elaborate snacks. However, moderation is key! This weekend, I made a light and easy snack perfect for enjoying with a beer, helping me recharge for the week ahead. Discover the delight of 100% real shrimp crackers, fresher and tastier than anything store-bought!

Main Ingredients

  • 200g Freshwater Prawns (Shrimp)
  • 1/2 cup (approx. 50g) Frying Mix (Tempura Flour)
  • 1 tsp Salt
  • 1 tsp Ginger Wine (or Mirin/Sake)
  • Pinch of Black Pepper
  • Vegetable Oil (for deep-frying)

Cooking Instructions

Prepare your fresh freshwater prawns. I often buy these for spicy shrimp stews, but today we’re using them to make delicious shrimp crackers! It’s important to eliminate any fishy smell. Ginger wine is excellent for this purpose. If you don’t have ginger wine, you can substitute it with sake or mirin.

Gently rinse the freshwater prawns once or twice under running water. Pat them dry to remove excess moisture. In a bowl, combine the rinsed prawns with ginger wine and salt, mixing well to remove the fishy odor and lightly season them. Next, sprinkle the frying mix over the seasoned prawns. Seal them in a resealable plastic bag or a ziplock bag and shake gently until the prawns are evenly coated. (Using a ziplock bag is recommended as the shrimp’s antennae can be sharp and prick your fingers!) You can also use cornstarch instead of frying mix, or a combination of both for extra crispiness.

Heat your vegetable oil to 180°C (350°F) for deep-frying. Carefully add the coated prawns to the hot oil and fry them for the first time. Remove them from the oil, let the excess oil drip off, and then increase the oil temperature before frying them a second time. Double-frying results in exceptionally crispy and flavorful shrimp crackers! Once they are golden brown, remove them from the oil and place them on paper towels to drain any excess oil. Your homemade 100% real shrimp crackers are now ready!
