I’ve enjoyed garlic scapes stir-fried with gochujang, but I wanted to explore more delicious ways to prepare them. This led me to create this delightful perilla seed salad with garlic scapes. It’s a fantastic way to enjoy the unique texture and flavor of garlic scapes.
Main Ingredients- 100g fresh garlic scapes
- 1/2 Tbsp coarse salt (for blanching)
Cooking Instructions
Step 1
First, prepare 100g of fresh garlic scapes. Wash them thoroughly under running water and pat them dry. Using a mandoline slicer to cut the garlic scapes into two halves will help preserve their crisp texture and ensure the seasoning is evenly distributed. (Tip: Using a mandoline makes it easier to achieve uniform thickness compared to cutting with a knife!)
Step 2
Bring a pot of water to a rolling boil. Once boiling, add 1/2 Tbsp of coarse salt, then add the prepared garlic scapes and blanch them for exactly 20 seconds. (Don’t overcook them, as they can become mushy – be sure to watch the time carefully!)
Step 3
Immediately rinse the blanched garlic scapes under cold water to cool them down. Then, drain them thoroughly in a colander. It’s crucial to remove all excess water, as any remaining moisture can make the salad taste diluted.
Step 4
To the drained garlic scapes, add 2 Tbsp of perilla seed powder for a nutty flavor, 2 tsp of tuna extract for a savory kick, and finally, 2 tsp of sesame oil for added aroma. Now, gently mix everything together with your hands until well combined. Your delicious garlic scape perilla seed salad is ready!
