Elegant Tofu and Kimchi Stir-Fry

Did you know that grilling tofu, despite its health benefits, might not be the best way to consume it? I had a block of tofu intended for a hearty stew, but it transformed into this delicious Tofu Kimchi! On a day when I was too tired after work to even cook rice and soup, I brainstormed how to make a meal out of just one block of tofu, and Tofu Kimchi won the vote! Haha.

Ingredients

  • 500g firm tofu
  • Kimchi, to taste
  • 1/2 stalk green onion
  • 1/4 onion
  • 1 tsp salt (for boiling tofu)
  • 2 tbsp perilla oil (Korean sesame oil)
  • 1 tsp fish sauce (or anchovy sauce)
  • 1 tsp sugar
  • Black sesame seeds, for garnish

Cooking Instructions

Start with one block of firm tofu (about 500g). To ensure it heats through evenly, cut the tofu in half lengthwise. Fill a pot with enough water to submerge the tofu completely, and add 1 teaspoon of salt. Boiling the tofu with salt helps it firm up, preventing it from breaking apart and enhancing its flavor.

Once the water reaches a rolling boil, reduce the heat to medium and let it simmer for another 2-3 minutes. Although the tofu is already cooked, re-boiling it gently warms it through, ensuring a tender texture throughout. Drain the tofu and set it aside.

Now, let’s prepare the flavorful kimchi. Heat 2 tablespoons of perilla oil in a pan over medium heat. Add the thinly sliced onion and diagonally cut green onion first. Sauté until fragrant. Once the onion begins to turn translucent, add the kimchi, chopped into bite-sized pieces. Feel free to adjust the amount of kimchi to your preference.

You can include some kimchi juice for a richer flavor, or omit it if you prefer. Add 1 teaspoon of sugar to balance the acidity and add a touch of sweetness. This helps to mellow out the tartness of the kimchi, making it even more delightful.

To enhance the savory depth, add 1 teaspoon of fish sauce (or anchovy sauce). This ingredient adds a wonderful umami kick without the strong fishy odor sometimes associated with fermented sauces. Ensure the tofu kimchi is well-seasoned; adjust with a pinch of salt if needed.

Continue to stir-fry for about 1 minute, allowing all the ingredients to meld together. If you desire a stronger perilla oil aroma, add a little more at this stage. If your kimchi isn’t very sour, a teaspoon of vinegar can add a bright, tangy finish that enhances the overall flavor profile. Your delicious Tofu Kimchi filling is now ready!

Presentation is key to making this dish truly shine! Use a wide, slightly concave plate for serving. Arrange the boiled tofu attractively, and carefully place the stir-fried kimchi alongside or on top, being mindful not to let the red kimchi sauce completely cover the tofu for a cleaner look.
