- 2 King Oyster Mushrooms
- 1 Tbsp Honey
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
Let’s get started with preparing the ingredients for our delicious Garlicky Pork Belly Barbecue! Please wash and prepare all ingredients thoroughly.
Step 2
I’m using a 1kg whole pork belly piece with a good balance of fat and meat. *A little tip!* Using whole pork belly for dishes like Bossam or barbecue results in a much more tender and juicy texture after cooking, making it a highly satisfying choice. I highly recommend using whole pork belly. Pat the pork belly dry with paper towels to remove any excess moisture.
Step 3
Lightly oil a heated pan. Place the pork belly fat-side down and sear it over high heat. This crucial step seals in the juices, ensuring a succulent interior. Think of it as searing the exterior to a golden crisp.
Step 4
Lightly season the seared surface with salt. Flip the pork belly and continue to sear both sides, as if deep-frying, until the exterior is golden brown and crispy. *Tip:* Avoid adding pepper at this stage. Pepper can burn easily and turn black, so omitting it during the initial searing helps maintain a beautiful color on the meat.
Step 5
Peel the onion and cut it into thick slices, about 1 to 1.5 cm thick. These will be roasted alongside the pork belly.
Step 6
Now, lay the thick onion slices on the pan where the pork belly has rendered some fat. Place the seared pork belly on top of the onions. This prevents the pork belly from directly touching the pan and burning. Reduce the heat to low, cover the pan, and let the pork belly cook slowly until it’s perfectly done on the inside. Slow cooking ensures a moist and tender result.
Step 7
Add the two whole king oyster mushrooms to the pan. Their earthy flavor will beautifully complement the pork.
Step 8
Toss in about 10 whole garlic cloves as well. Roasting the garlic with the pork belly will make it sweet and tender, adding a wonderful depth of flavor to the garlic sauce. Roast the pork belly, onions, mushrooms, and garlic together in the rendered pork fat until golden brown.
Step 9
Now, let’s make the star sauce: the roasted garlic! While the ingredients are roasting, keep an eye on the garlic and stir occasionally to ensure it roasts evenly without burning. Once the garlic cloves are tender, remove them from the pan and mash them thoroughly with a fork to create a smooth paste.
Step 10
In a small bowl, combine the mashed garlic with 1 tablespoon of honey and 1 tablespoon of toasted sesame seeds. Mix well to create a wonderfully aromatic and slightly sweet garlic sauce! This sauce will elevate the flavor of the pork belly to a whole new level.
Step 11
Carefully remove the perfectly cooked pork belly, which is now juicy and tender, from the pan. Slice it thinly into bite-sized pieces. Slicing it not too thick will allow the sauce to coat each piece beautifully.
Step 12
Generously spoon the prepared sweet and garlicky sauce over the sliced pork belly. Arrange the roasted mushrooms and onions attractively on the plate alongside the pork. Your magnificent ‘Garlicky Pork Belly Barbecue’ is now complete!
Step 13
The contrast between the crispy exterior and the incredibly tender, juicy interior of the pork belly, paired with the sweet and zesty garlic sauce, is simply divine – you won’t need any other side dishes! The roasted mushrooms and onions were also a fantastic accompaniment. This is a special dish perfect for the whole family to enjoy!
