  • 4 fresh eggs
  • 1 pack (approx. 100g) enoki mushrooms
  • 1/2 to 1 onion (adjust to your preference)
  • 1/2 stalk of green onion (white part)
  • 1 can (small size) of tuna, drained
  • A little cooking oil

Flavorful Seasoning

  • 1.5 Tbsp oyster sauce
  • 1.5 Tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp sugar
  • 1/2 Tbsp red pepper flakes (gochugaru)

First, finely chop the white part of the green onion. This will add a fragrant aroma to the dish.

Peel and thinly slice the onion. The sweetness will blend beautifully when cooked.

Trim the base of the enoki mushrooms and gently pull them apart into smaller strands. This helps the seasoning distribute evenly.

Heat a pan with cooking oil over medium-low heat. Add the chopped green onion and sliced onion, and sauté until the onion becomes translucent and fragrant. This caramelizes the onion, enhancing its sweetness.

Once the onions start to turn translucent, add the enoki mushrooms and stir-fry until they soften and shrink.

When the mushrooms have wilted, add all the seasoning ingredients (oyster sauce, soy sauce, minced garlic, sugar, red pepper flakes) to the pan. Stir-fry quickly over medium-high heat, being careful not to burn the seasonings.

Continue to stir-fry until the vegetables are well coated with the sauce. Then, add the drained canned tuna and cook for another 30 seconds. The tuna adds a savory depth. Turn off the heat and let the mixture cool slightly.

In a large bowl, crack all the eggs and whisk them thoroughly, removing the chalazae (the white stringy bits). It’s important to pour the egg mixture relatively thickly into the pan so that it doesn’t break when you add the filling.

Lightly grease a non-stick pan and heat it over medium-low heat. Pour in the beaten eggs, spreading them into an even layer. Cook until the edges start to set, about 70% cooked.
