Spicy and Sweet Braised Saury

I made spicy and sweet braised saury using canned saury. It’s simple to make and satisfying enough to eat without any other side dishes. I also added radish to braise with the saury, and the radish turned out wonderfully sweet and flavorful. This is a perfect dish for a quick and delicious meal.

Main Ingredients

  • 1 can (500g) Canned Saury
  • 250g Radish
  • 1 Onion
  • 1 Green Onion
  • 2 Korean Green Chilies (Cheongyang)

Seasoning Sauce

  • 1 Tbsp Gochugaru (Korean chili powder)
  • 2 Tbsp Soy Sauce
  • 1 tsp Sugar
  • 1 Tbsp Minced Ginger
  • 1 Tbsp Minced Garlic
  • 150ml Water

Cooking Instructions

Step 1

Prepare one can (500g) of canned saury. Open the can, drain the saury, and use the amount you need. Set aside the liquid from the can.

Slice the radish into thick, half-moon shapes about 1cm thick. Slice the onion thinly. Cut the green onion and green chilies diagonally. Feel free to adjust the vegetable quantities to your preference.

In a small bowl, combine 1 Tbsp gochugaru, 2 Tbsp soy sauce, 1 tsp sugar, 1 Tbsp minced ginger, and 1 Tbsp minced garlic. Mix well to create the seasoning sauce.

Add 150ml of water to the prepared seasoning sauce and mix until smooth. This will create a delicious braising sauce that will deeply flavor the ingredients.

In a wide pot, place the sliced radish at the bottom. The radish will absorb the sauce and become wonderfully sweet as it cooks. Arrange the thinly sliced onion attractively over the radish.

Layer the prepared saury over the radish and onion. Pour about 3 ladlefuls of the canned saury liquid over the fish. This helps to remove any fishy odor and enhances the flavor.

Pour the prepared seasoning sauce evenly over the saury and vegetables. Cover the pot with a lid and place it on the stove to start braising. Begin with medium-high heat and reduce the heat once it comes to a boil.

Simmer over medium-high heat for about 10 minutes. During this time, lift the lid and ladle the braising liquid over the saury and radish frequently. This ensures the flavors penetrate evenly. Once the liquid has reduced slightly, add the diagonally sliced green onion and green chilies. Reduce the heat to low and continue to simmer for another 10 minutes.
