  • Difficulty : Anyone

Main Ingredients

  • 1 pack Scallop Slices (approx. 200g)
  • 2 handfuls Fresh Salad Greens (e.g., romaine, lettuce, baby leaves)
  • 1/2 handful Nuts (e.g., walnuts, almonds)
  • 6 Cherry Tomatoes
  • 1/2 Onion
  • 1/2 Yellow Bell Pepper
  • 1/2 Red Bell Pepper

Refreshing Lemon Dressing

  • 7 Tbsp Olive Oil
  • 5 Tbsp Soy Sauce
  • 3 Tbsp Fresh Lemon Juice
  • 2/3 Tbsp Sugar
  • 1/3 Tbsp Toasted Sesame Seeds
  • 1 pinch Salt
  • 1 pinch Black Pepper

Cooking Instructions

Step 1

Rinse the fresh salad greens thoroughly under running water. Shake off excess water or let them drain in a colander.

Step 1

Step 2

Peel the onion and slice it into very thin shreds. Thinly sliced onions are less pungent and blend better into the salad.

Step 2

Step 3

Soak the washed salad greens and thinly sliced onion in cold water for about 10 minutes. This helps maintain their crispness and freshness.

Step 3

Step 4

Gently press the water out of the soaked greens and onion using your hands, or pat them dry with a paper towel. Be careful not to mash the vegetables.

Step 4

Step 5

Lightly rinse the scallop slices under running water to remove any debris. Gently wipe away any blood or sticky residue.

Step 5

Step 6

Blanch the scallop slices in boiling water for a very short time, about 10 seconds. Overcooking will make them tough, so timing is crucial.

Step 6

Step 7

Immediately transfer the blanched scallops to an ice bath and let them soak for about 5 minutes. This step helps achieve a firm and chewy texture.

Step 7

Step 8

Soaking for too long in ice water can make the scallops mushy, so 5 minutes is ideal. After removing from the ice bath, drain the scallops thoroughly.

Step 8

Step 9

Remove the stems from the cherry tomatoes, wash them, and cut them into quarters. If your nuts are large, chop them into bite-sized pieces.

Step 9

Step 10

Remove the seeds from the yellow and red bell peppers, then finely chop them. This will add color and a satisfying crunch to the salad.

Step 10

Step 11

In a bowl, combine 7 Tbsp olive oil, 5 Tbsp soy sauce, 3 Tbsp fresh lemon juice, 2/3 Tbsp sugar, 1/3 Tbsp toasted sesame seeds, a pinch of salt, and a pinch of pepper. Whisk well until all ingredients are fully incorporated to create the zesty dressing. Ensure it’s thoroughly mixed.

Step 11

Step 12

Arrange the prepared salad greens, scallops, cherry tomatoes, bell peppers, and nuts attractively on a serving plate. Drizzle with your desired amount of the prepared dressing to complete your delicious scallop salad. Enjoy the wonderful combination of fresh ingredients and bright dressing!
