When you happen to buy peaches that are not quite ripe or lack sweetness, try transforming them into a delicious marinade by gently tossing them with black tea. The aromatic essence of Earl Grey tea will infuse into the peaches, creating a wonderfully sweet and fragrant dessert that feels incredibly sophisticated. It’s an easy way to elevate simple ingredients into a special treat.

Ingredients

  • 2 Peaches
  • 1 tsp Earl Grey tea leaves (or your favorite fruity black tea)
  • 1 Tbsp Agave syrup (or honey, sugar, corn syrup, allulose, etc.)
  • 1 pinch Salt
  • Greek yogurt or plain yogurt (for serving, as needed)

You can use either firm peaches (‘takbok’) or juicy, soft peaches (‘mulbok’). Personally, I find firm peaches pair slightly better with the Earl Grey aroma, making them taste even more delicious. Choose based on your preference.

Wash the peaches thoroughly under running water and peel them. Then, cut them into bite-sized pieces (about 2-3 cm). Remove the pit.

Place all the prepared peach pieces into a generous-sized bowl. To ensure the peaches become delightfully sweet during maceration, add your preferred sweetener, such as agave syrup, honey, sugar, corn syrup, or allulose. Adjust the amount based on the natural sweetness of the peaches and your taste.

Adding a pinch of salt here will further enhance the flavors. A tiny amount of salt makes the sweetness stand out more and balances the overall taste, making it much more enjoyable.

Gently toss the peaches with the agave syrup (or your chosen sweetener) and salt until well combined. Let them sit for about 10 minutes. During this time, a little moisture will naturally seep out from the surface of the peaches, making them look and feel slightly moist.

Once the peaches have a slightly moist surface from their released juices, add about 1 teaspoon of Earl Grey tea leaves (or your prepared black tea leaves). Toss again thoroughly to coat. Thanks to the moisture on the peach surface, the tea leaves will easily cling to the peach pieces without clumping.

Now, cover the bowl with the mixed ingredients tightly with plastic wrap or a lid, and place it in the refrigerator. Let it marinate for at least 30 minutes to 1 hour. If you have more time, you can let it steep longer for a deeper flavor.

Take out the marinated peaches from the refrigerator. You’ll notice that the peaches have absorbed the fragrant aroma of Earl Grey tea and have become much sweeter and softer. They are delicious to enjoy just as they are.
