I found zucchini and Korean squash for just $0.99 each at the supermarket, so I picked out a large, firm zucchini. This stir-fried zucchini, seasoned with fragrant perilla oil and savory fermented seafood sauce, is a perfect side dish for any meal.
Main Ingredients- 1/2 medium Zucchini
- 1/2 medium Onion

Cooking Instructions
Step 1
First, prepare the ingredients for the dish: 1/2 zucchini, 1/2 onion, and 3 cloves of garlic. Using fresh ingredients will enhance the overall flavor of your dish.

I considered slicing the zucchini and onion into half-moons, but decided to cut them into longer strips for consistency, especially since we’re using onion as well. You can see the seeds inside the zucchini. Slice them to a moderate thickness, not too thin.

To prevent the zucchini from becoming too mushy or losing its texture when stir-fried, I’ve cut it into slightly thicker, elongated pieces. Slice the onion into similar-sized strips. Finely mince the garlic. Minced garlic will add a wonderful aroma to the dish.

Now, heat a pan over medium heat and add 1 tablespoon of perilla oil. The nutty and fragrant aroma of the perilla oil will make your stir-fried zucchini even more delicious.

Once the pan is hot, add the minced garlic first and stir-fry quickly for about 15 seconds until fragrant. Sautéing the garlic first removes any raw smell and brings out its delightful aroma.

After the garlic is lightly sautéed, add the prepared zucchini and onion to the pan and stir-fry them together. It’s important to stir-fry the ingredients so they combine well.

Stir-fry for about 30 seconds until the zucchini and onion are slightly softened. Then, add 1 tablespoon of fish sauce, which is the key to the savory flavor, to the pan.
