Main Ingredients

  • 280g Frank sausages
  • 1/4 Carrot (approx. 30g)
  • 1/2 Onion (approx. 70g)
  • 1/4 Red bell pepper (approx. 30g)
  • 1/4 Green bell pepper (approx. 30g)
  • 1/4 Yellow bell pepper (approx. 30g)
  • 1 Tbsp minced garlic (15g)

Cooking Instructions

Step 1

1. Prepare the Vegetables: Dice the carrot, onion, and bell peppers into bite-sized pieces, about 0.5cm thick and 1.5cm x 1.5cm. Remove the seeds from the bell peppers. Cutting the vegetables into similar sizes ensures they cook evenly.

Step 2

2. Blanch the Sausages: Place the frank sausages in boiling water and blanch for about 1-2 minutes. This step helps to remove excess oil and impurities from the sausages, resulting in a cleaner taste.

3. Score the Sausages: Pat the blanched sausages dry with a paper towel. Make cuts about 0.5cm apart in a diamond pattern or diagonally. Scoring the sausages allows the sauce to penetrate better and makes them look more appealing when cooked.

4. Stir-fry the Vegetables: Heat a little cooking oil in a pan over medium-high heat. Add the prepared carrots, onion, and bell peppers. Stir-fry them briskly for about 1 minute with 1 Tbsp of minced garlic until they are tender-crisp. Be careful not to overcook, as they can become mushy.

5. Add and Stir-fry Sausages: Push the vegetables to one side of the pan. Add the scored sausages and stir-fry them with the vegetables for 1-2 minutes until they are lightly browned.

6. Add Sauce and Continue Stir-frying: Add 2 Tbsp oyster sauce, 3 Tbsp ketchup, and 2/3 Tbsp sugar. Stir well to coat all the ingredients with the sauce, and continue to stir-fry for another 2-3 minutes until the flavors meld. Stir occasionally to ensure even cooking. If desired, add chopped scallions at this stage for an aromatic touch.

Step 7

7. Finish and Serve: Just before turning off the heat, drizzle in a little sesame oil and sprinkle with sesame seeds. Give it a final toss to combine. This adds a wonderful nutty aroma and flavor. Your delicious Sausage and Vegetable Stir-Fry is ready!
