Main Ingredients- 1 eggplant
- 6 stalks scallions
- 1 green chili pepper
- 1 red chili pepper
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, wash the eggplant thoroughly. Then, dice it into bite-sized cubes, approximately 1cm on each side. Ensuring uniform size will help it cook evenly.
Step 2
Finely chop the scallions. Cut the green and red chili peppers in half lengthwise, remove the seeds, and then finely chop them. If you enjoy more spice, you can leave some of the green chili seeds in.
Step 3
In a large bowl, combine the pancake mix and water. Whisk well until smooth, ensuring there are no lumps to create a soft batter. If the batter is too thick, add a little more water; if it’s too thin, add a bit more pancake mix until you reach the desired consistency. (Tip: The batter should flow smoothly.)
Step 4
Add the diced eggplant, chopped scallions, and chili peppers to the prepared batter. Gently toss everything together to ensure the vegetables are evenly coated with the batter. Season lightly with salt and pepper for enhanced flavor.
Step 5
Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Spoon portions of the eggplant mixture into the hot pan and fry until golden brown and crispy on both sides. Cook thoroughly until the eggplant is tender and the batter is nicely crisped. Serve hot with your favorite dipping sauce!
