  • 100g dried radish greens
  • A little bit of green onion
  • 1 tsp salt (for boiling)

Seasoning Ingredients

  • 3-4 Tbsp soy sauce
  • 2 Tbsp oligosaccharide (adjust sweetness)
  • 1 Tbsp minced garlic
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 3 Tbsp grapeseed oil (or cooking oil)
  • 1 Tbsp sesame oil
  • A little bit of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the dried radish greens. Soak them in hot water that generously covers them for about 4-5 hours until thoroughly rehydrated. This soaking process is key to achieving a tender texture later on.

Transfer the rehydrated radish greens to a pot without draining the soaking water. Add 1 tsp of salt and just enough water to cover the greens, then bring it to a boil. The salt helps to remove any bitterness and season the greens.

Boil vigorously over high heat for 15 minutes. Then, cover the pot, reduce the heat to medium-low, and simmer for about 30 minutes. After turning off the heat, let it sit covered for another 20-30 minutes. This steaming process makes the greens even more moist and tender.

Once the greens are boiled, it’s important to cool them completely in cold water. After cooling, soak them in fresh cold water for half a day to a full day. This prolonged soaking will ensure that the dried radish greens are incredibly soft and free of any tough texture, resulting in delicious greens for any dish.

Rinse the softened greens thoroughly under cold running water. Gently squeeze out excess water with your hands. Cut the greens into bite-sized pieces. Finely chop the green onion. In a bowl, combine the greens and chopped green onion with all the seasoning ingredients (soy sauce, oligosaccharide, minced garlic, gochugaru). Mix well with your hands until evenly coated. Let it marinate for about 10 minutes to allow the flavors to meld.

Heat a pan over medium heat and add grapeseed oil (or your preferred cooking oil). Add the marinated radish greens to the pan and begin to stir-fry. It’s important to stir frequently to prevent sticking and burning.

Stir-fry for about 3-5 minutes, or until the greens are cooked to your desired tenderness. Just before turning off the heat, drizzle in the sesame oil and sprinkle with sesame seeds. This completes your savory and delicious stir-fried dried radish greens.
