  • 5 strips bacon
  • 7 cherry tomatoes
  • Cream cheese, to taste
  • Balsamic glaze, to taste

First, let’s prepare all the ingredients for our delicious eggplant roll salad. Wash and chop everything as needed to get ready for cooking.

Wash the fresh cherry tomatoes, remove their stems, and slice them into quarters. Cutting them this way makes them look pretty and blend well with the other ingredients.

Heat a dry pan over medium heat without adding any oil. Place the bacon strips in the pan and cook them, flipping occasionally, until they are golden brown and crispy. You can dab away some of the rendered bacon fat with a paper towel to reduce greasiness.

Take the fresh eggplant and, without peeling, use a vegetable peeler (or a knife) to create long, thin slices. This technique helps the eggplant become tender and cook faster. Lightly season the eggplant slices with salt and pepper. Then, add a little cooking oil to a pan over medium heat and place the eggplant slices in it. Grill both sides until they are nicely browned, enhancing the eggplant’s flavor.

Overlap 2-3 slices of the grilled eggplant on your work surface. Spread a thin layer of cream cheese evenly over them. Then, place a strip of the crispy grilled bacon lengthwise on top. Carefully roll the eggplant slices up tightly, like making sushi or a wrap, to enclose the filling.
