Main Ingredients

  • 2 prepared dried pollock (kodari)
  • 2 small onions, sliced
  • 1 Korean green chili pepper (cheongyang-gochu), thinly sliced diagonally
  • A handful of green onions, chopped

Seasoning Mix

  • 2 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 1 tsp ginger juice
  • 1.5 Tbsp plum extract (maesil-cheong)
  • 1 Tbsp cooking wine (mirin or cheongju)
  • 3 Tbsp red chili powder (gochugaru)
  • 2/3 Tbsp soybean paste (doenjang)

Cooking Instructions

Step 1

First, rinse the prepared dried pollock (kodari) under running water until clean. Arrange the rinsed fish at the bottom of a pot. Trimming the fins and tail can make the dish look neater.

Generously top the cod with the thickly sliced onions. The sweetness and moisture released from the onions will add depth of flavor to the braise.

Now, let’s make the delicious seasoning sauce! In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 tsp ginger juice, 1.5 Tbsp plum extract, 1 Tbsp cooking wine, 3 Tbsp red chili powder, and 2/3 Tbsp soybean paste. Mix well. Pour this sauce evenly over the cod. Adding about 1 cup of anchovy broth or rice water will enhance the flavor even further. Cover with a lid and simmer over medium heat.

Once the sauce begins to simmer, ladle the broth over the fish as it cooks. This helps the sauce penetrate the top of the cod, making it even more flavorful. Reduce the heat to medium-low and continue to simmer, being careful not to let it burn.

When the sauce has thickened slightly and the cod is cooked through and lightly browned, add the diagonally sliced green onions and Korean green chili peppers for garnish. Simmer for another 2-3 minutes to complete the delicious Braised Cod. The fragrant green onions and spicy chili peppers will cut through any richness and add wonderful aroma.
