  • Cherry tomatoes 5-8 pieces
  • Baby greens, a generous amount
  • Red onion 1/4
  • Olive oil 2 Tbsp (for searing)
  • Button mushrooms 3-4

Steak Seasoning

  • Olive oil 2 Tbsp
  • Coarse salt, to taste
  • Black pepper, to taste
  • Rosemary or thyme sprigs (optional, for added aroma)

Salad Dressing

  • Olive oil 3 Tbsp
  • Balsamic vinegar 1.5 Tbsp
  • Lemon juice 1/2 Tbsp
  • Salt, 1 pinch
  • Honey 1½ Tbsp
  • Minced garlic 1 tsp
  • Black pepper, a little

Cooking Instructions

First, pat the beef sirloin dry with paper towels to remove any excess moisture. Trim away any tough sinew or excess fat. Brush the steak evenly with 2 Tbsp of olive oil. Season generously with coarse salt and freshly ground black pepper. Let the steak rest and marinate for 10-15 minutes. For an extra layer of flavor, you can add a sprig of rosemary or thyme on top while it marinates.

While the steak is marinating, prepare your salad greens. Gently rinse the cherry tomatoes and baby greens under cool running water. Be careful not to bruise the delicate baby greens. After washing, thoroughly drain them in a colander to prevent the salad from becoming watery.

Thinly slice the red onion. To mellow its sharp flavor, soak the sliced onion in cold water for a few minutes. Drain the onion well before using. Cut the cherry tomatoes in half or quarters, depending on their size.

For an emulsified dressing, continue whisking until slightly thickened.

It’s time to cook the steak! Heat a heavy-bottomed skillet over high heat until very hot. Add a swirl of olive oil. Carefully place the seasoned sirloin steak into the hot pan.

For thinner cuts like this sirloin, it will cook quickly. Sear each side for about 1-1.5 minutes over high heat. For thicker steaks, after searing, reduce the heat to medium, add a knob of butter to the pan, and continue cooking, basting with the melted butter, for an additional 1.5 minutes per side for a perfect medium steak. Adjust cooking time based on your desired level of doneness.

Once cooked to your liking, remove the steak from the pan and place it on a cutting board. Tent it loosely with aluminum foil or parchment paper and let it rest for about 5 minutes. This resting period allows the juices to redistribute throughout the steak, ensuring it remains incredibly moist and tender.

After resting, slice the steak into your desired thickness, about 1 to 1.5 cm (around 1/2 inch). Arrange the fresh baby greens, cherry tomatoes, red onion, and sautéed mushrooms on a serving plate.
