Chewy King Oyster Mushroom and Squid Chive Pancake Recipe

Craving something warm and delicious on a rainy day? Make this hearty chive pancake, generously filled with chewy squid, fragrant king oyster mushrooms, and fresh chives. It’s the perfect accompaniment to a glass of makgeolli.

Main Ingredients

  • 1/2 bunch fresh chives
  • 1 pack large king oyster mushrooms
  • 2 red chili peppers
  • 5 small cleaned squids
  • 2 fresh eggs

Batter & Seasoning

  • 400g pancake mix
  • 500ml cold water
  • 1 pinch fine salt
  • 6-8 Tbsp cooking oil (sunflower oil recommended)

Cooking Instructions

Step 1

First, prepare one large pack of fresh king oyster mushrooms. Trim the tough ends and then tear the mushrooms into bite-sized pieces by hand. Tearing them helps the seasoning to penetrate better and enhances their texture.

Prepare 5 small cleaned squids. Add 1 tablespoon of flour to the inside of the squids and rub them well. This process removes any sliminess and makes them easier to wash thoroughly. Rinse them under running water, then slice them thinly. Aim for a thickness similar to the king oyster mushrooms for a pleasant bite when cooked. (I used only the bodies of the squids.)

Wash and prepare half a bunch of chives. After removing excess water, cut them into 3-4 cm lengths. The fresh aroma and crisp texture of the chives will add wonderful flavor to the pancake.

Thinly slice 2 red chili peppers. You can remove the seeds if you prefer less heat. The chili peppers add a nice color and a touch of spice to the pancake.

In a large bowl, combine 400g of pancake mix and 2 fresh eggs. Gradually add 500ml of cold water while whisking or stirring with a spatula until smooth and free of lumps. The batter should have a consistency similar to thin soup – not too thick, not too watery. If it’s too thick, the pancake might be tough, and if it’s too thin, it will be difficult to cook.

Add all the prepared ingredients – king oyster mushrooms, squid, chives, and red chili peppers – to the smooth pancake batter. Add 1 pinch of fine salt and mix gently to combine everything evenly without overmixing. Ensure the ingredients are well distributed.

Heat 6-8 tablespoons of cooking oil (sunflower oil is recommended) in a pan over medium-low heat. Ladle portions of the batter onto the hot pan, shaping them into rounds. Cook until the edges are golden brown and the bottom is set, about 3-4 minutes.

Once the bottom is golden, carefully flip the pancake with a spatula. After flipping, gently press down on the pancake with the back of the spatula. This helps to cook the inside thoroughly and ensures the pancake holds its shape without breaking or tearing, resulting in a crisp and sturdy finish.
