Ingredients (Measurements: Tablespoons)

  • 1 can Spam (approx. 200g)
  • 4 eggs
  • 2 slices cheese (e.g., cheddar)
  • 2 sheets seaweed (for kimbap)
  • 2 bowls warm cooked rice
  • Pinch of salt
  • 1 Tbsp mirin (or cooking wine)
  • 1 Tbsp cooking oil
  • A little sesame oil

Cooking Instructions

Step 1

In a bowl, crack the 4 eggs. Add a pinch of salt and 1 tablespoon of mirin to eliminate any eggy odor and whisk well. Whisking thoroughly to remove the chalazae will ensure a smoother texture.

Step 1

Step 2

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Pour in a thin layer of the whisked egg mixture. As the egg begins to set, carefully start rolling it from one end. Move the rolled omelet to one side of the pan, pour more egg mixture into the empty space, and continue rolling the previous omelet with the new layer. Repeat this process until all the egg mixture is used.

Step 2

Step 3

Once the thick egg roll is complete, let it cool slightly. Then, cut it into pieces that match the size of your Spam can. Using the Spam can as a mold will make shaping much easier.

Step 3

Step 4

Using a clean Spam can, cut the Spam to fit inside. Turn the can upside down and slice the Spam to fit snugly within its dimensions. Typically, cutting the Spam into 4 equal vertical pieces will yield the correct size for one musubi. Make sure to wash and dry the Spam can thoroughly before using it.

Step 4

Step 5

Wipe the pan used for the egg roll clean with a paper towel. Then, pan-fry the Spam slices until they are golden brown on both sides. This step enhances the flavor and removes excess oil.

Step 5

Step 6

Cut the cheese slices in half. Halving the cheese pieces will help them fit nicely on top of the Spam.

Step 6

Step 7

Line the clean Spam can with a plastic wrap or a food-grade plastic bag. Spread the warm cooked rice evenly inside the wrap-lined can, pressing it down firmly with your hand or a spatula to create a compact layer. Pressing the rice ensures it holds its shape.

Step 7

Step 8

Place the pan-fried Spam slices on top of the flattened rice layer, followed by a slice of cheese on each.

Step 8

Step 9

Finally, add the cut egg roll and top with another layer of rice. Press down firmly again with your hands or a tool to ensure the musubi takes on a solid, square shape.

Step 9

Step 10

Pressing the rice firmly is crucial for maintaining the shape of the musubi. This step is key to achieving a well-formed final product.

Step 10

Step 11

Carefully lift the musubi out of the Spam can using the plastic wrap. You’ll have a perfectly formed square musubi that holds its shape.

Step 11

Step 12

Place the shaped musubi onto a sheet of seaweed (gim). Carefully wrap the seaweed around the musubi, ensuring the overlapping edge is placed at the bottom. This prevents the seaweed from unfolding.

Step 12

Step 13

Lightly coat a kitchen knife with sesame oil to prevent the rice from sticking, then slice the musubi into desired portions. Arrange these beautiful Spam musubi in your lunch box for a visually appealing and delicious meal!
