  • Soju 1/2 cup (or cooking sake)

Pork Ribs Marinating Ingredients (Tablespoon measurement)

  • Herb salt 1 tablespoon
  • Cooking oil 2 tablespoons
  • Mirin (or cooking sake) 2 tablespoons

Homemade BBQ Sauce Ingredients

  • Soy sauce 2~3 tablespoons
  • Sugar 1 tablespoon
  • Oligosaccharide 2 tablespoons
  • Gochujang (Korean chili paste) 0.7 tablespoon (approx. 2/3 tablespoon)
  • Mirin (or cooking sake) 2 tablespoons
  • Minced garlic 0.5 tablespoon (approx. 1/2 tablespoon)
  • Ketchup 2 tablespoons
  • Water 4 tablespoons
  • Pepper, a pinch (to taste)

Carefully remove the tough membrane from the pork ribs with a knife, then separate the ribs into individual portions. Soak the separated ribs in cold water for about two hours to remove excess blood. This step is crucial for a clean taste without any gamey odor.

Grilling raw ribs can result in the outside burning before the inside is cooked. To prevent this, we’ll first pre-boil them. For the pre-boiling liquid, prepare bay leaves and whole peppercorns to remove any gamey smell, soju (or cooking sake) to tenderize the meat, and half an apple (with seeds and core removed) to add a subtle fruity note.

In a large pot, add enough water to fully submerge the ribs and bring it to a rolling boil over high heat. Once boiling, add the bay leaves, apple, and whole peppercorns. Then, place the blood-drained ribs into the pot. Finally, pour in half a cup of soju (or cooking sake) to help tenderize the meat and eliminate odors.

As the water returns to a boil after adding the ribs, skim off any foam that rises to the surface. Reduce the heat to medium and let the ribs simmer for 20 minutes. This ensures the ribs are cooked through and remain juicy.
