Basic Ingredients

  • 2 cups thinly sliced beef for bulgogi (approx. 300-400g)
  • 1/2 onion
  • 10cm piece of green onion (1 stalk)
  • 5cm piece of carrot (1/3)
  • 1 handful of oyster mushrooms (approx. 50g)
  • A little cooking oil
  • 2 pinches of salt
  • 2 pinches of black pepper

Chef Baek’s Bulgogi Marinade

  • 6 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin or rice wine)
  • 2 Tbsp sugar
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic

First, prepare 2 cups of thinly sliced beef for bulgogi. Place the beef in a bowl. Add all the marinade ingredients: 6 Tbsp soy sauce, 2 Tbsp cooking wine, 2 Tbsp sugar, 2 Tbsp sesame oil, and 1 Tbsp minced garlic. Gently mix and massage the marinade into the beef with your hands. Marinating the beef like this for at least 30 minutes in the refrigerator allows the flavors to penetrate deeply, resulting in a much more delicious bulgogi. Sufficient marinating time ensures better flavor infusion.

Since the beef will be added and cooked together later, there’s no need to cook the vegetables completely at this point. Just let them soften slightly.

Cooking over high heat can cause the meat to burn or become tough. Keep stirring to prevent the meat from clumping.
