Springtime Garlic Scape Fried Rice
Super Simple Garlic Scape Fried Rice Bursting with Spring Flavors
Garlic scapes are a delicious seasonal ingredient perfect for spring! Before pickling them, I decided to make a super simple fried rice with a few stalks.
Main Ingredients- 2 garlic scapes
- 1 onion
- 1 pack enoki mushrooms
- 2 eggs
- 2 bowls warm cooked rice

Cooking Instructions
Step 1
First, thoroughly wash the main ingredients for the fried rice: onion, garlic scapes, and enoki mushrooms under running water and prepare them. Preserving the fresh texture and aroma of the vegetables is key.
Step 2
Finely mince the washed onion and garlic scapes. For the enoki mushrooms, to maintain a pleasant texture, chop them slightly larger than the other ingredients so they retain a nice bite.
Step 3
Crack the eggs into a bowl for a creamy texture in the fried rice. Add a pinch of salt to season and whisk them thoroughly. Remove any stringy bits with a chopstick for a smooth egg mixture.
Step 4
Heat a pan with a generous amount of cooking oil. First, add the minced onion and sauté until translucent to release its fragrant aroma. As the onion cooks, its natural sweetness will enhance the umami of the fried rice.
Step 5
Once the onion is translucent, add the minced garlic scapes and stir-fry them together. Sauté until a sufficient aromatic fragrance is released from the garlic scapes. Lightly season with a pinch of salt at this stage to further enhance the vegetables’ flavor.
Step 6
Push the sautéed vegetables to one side of the pan. Pour the whisked egg mixture into the empty space and cook until it begins to set. Once the egg is partially cooked, add the enoki mushrooms and mix everything together, stir-frying until it becomes fluffy and crumbly. Tip! It’s also delicious to stir-fry the enoki mushrooms and eggs together – feel free to adjust based on your preference!
Step 7
Move the cooked ingredients to the side of the pan and add the warm cooked rice. To prevent the rice grains from clumping, use a spatula held vertically and gently stir-fry, ensuring each grain is coated with the seasonings.
Step 8
Once the rice and ingredients are well combined, adjust the seasoning to your taste using the salt. Finally, turn off the heat, drizzle in 1 tablespoon of perilla oil, and sprinkle with sesame seeds for a nutty finish.
Step 9
Transfer the well-stirred garlic scape fried rice to a plate. You’ve now completed a delicious garlic scape fried rice that is full of the fresh aroma of spring!
