Today, I’m sharing a recipe for soy sauce braised potatoes that are so chewy and don’t fall apart, kids absolutely love them! Unlike typical braised potatoes that can become mushy, this recipe uses a special secret ingredient to achieve a wonderfully chewy, jelly-like texture that children adore. Get ready to clear a bowl of rice with this delicious dish!

Main Ingredients

  • 3 medium potatoes
  • 1 slice of fresh ginger
  • 4 Tbsp rice syrup (Jocheong)

Seasoning Ingredients

  • 2.5 Tbsp soy sauce
  • 2 Tbsp mirin (rice wine)
  • 0.5 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, wash the potatoes thoroughly and peel them. Cut them into bite-sized pieces (about 2-3 cm). Place the cut potatoes in a bowl and add 4 Tbsp of rice syrup. Mix well to coat the potatoes. Let them sit at room temperature for 20 minutes to draw out moisture and slightly cure. (They will not cook during this step!)

While the potatoes are curing, let’s make the delicious seasoning sauce. In a small bowl, combine 2.5 Tbsp soy sauce and 2 Tbsp mirin. Mix well and set aside. The sesame oil and sesame seeds will be added at the end.

Now it’s time to braise the potatoes! When you take the potatoes out, you’ll notice they’ve released some liquid along with the rice syrup. Don’t discard this liquid! Place the potatoes and their liquid directly into a pot or pan. Cook over medium-low heat until the potatoes are tender. Once the potatoes are somewhat cooked and the liquid has reduced slightly, add the prepared seasoning sauce and the ginger slice. Stir gently to ensure the sauce coats the potatoes evenly, and continue to simmer until the sauce thickens and becomes glossy. Finally, turn off the heat, drizzle in 0.5 Tbsp sesame oil, and sprinkle with a pinch of toasted sesame seeds. Your chewy and delicious soy sauce braised potatoes are ready!
