Sweet & Crispy Sweet Potato Candies (Two Ways!)

Today, we’re making sweet potato candies in two delightful variations! One is the classic original style, coated with rice syrup (or corn syrup). The other is a fusion version, incorporating citron syrup alongside rice syrup. The citron syrup helps balance the sweetness and richness, adding a subtle tartness that makes these candies incredibly addictive and hard to put down. Perfect for special occasions or when you need a comforting sweet treat!

First, wash the sweet potatoes thoroughly under running water to remove any dirt. Then, use a vegetable peeler to carefully remove the skins. It’s best to peel them immediately after washing, without letting the sweet potatoes soak in water.

Once peeled, cut the sweet potatoes into pieces about 1 cm thick. Since the sweet potatoes I’m using are on the smaller side, I’ve cut them into bite-sized, round pieces.

It’s helpful to use a small pot or a deep pan for frying. Because the sweet potato pieces are small, you can use just enough oil to barely cover them, which saves oil while ensuring they fry up deliciously. Aim for an oil temperature of around 170°C (340°F).

The fried sweet potatoes are ready! Don’t place the freshly fried pieces directly onto paper towels. Leaving a little bit of oil on them will help prevent the syrup coating from hardening too quickly and will ensure it adheres well to the sweet potatoes.

Now, let’s make the ‘Original Sweet Potato Candies’.

Place the fried sweet potato pieces in a wide pan. Add a generous amount of rice syrup (or corn syrup). Over low heat, gently toss the sweet potatoes to coat them evenly with the syrup, being careful not to break them.

Your sweet and crispy original sweet potato candies are complete! You can sprinkle with sesame seeds if you like.

Next, here’s how to make the ‘Citron Sweet Potato Candies’.

Add the fried sweet potatoes to the pan, along with 1 tablespoon of citron syrup and a suitable amount of rice syrup (or corn syrup). Again, cook over low heat, gently mixing until everything is coated. The fragrant citron syrup adds a wonderfully unique flavor.
