No need to visit a strawberry buffet anymore! Here’s a simple no-bake strawberry tart recipe you can easily make at home. This French-style dessert features a crispy tart base made from crushed cookies and butter, filled with a smooth cream mixture, and topped generously with fresh strawberries. Create a special dessert that’s as delightful to look at as it is to eat, right in your own kitchen.

Ingredients

  • 15 fresh strawberries
  • 80g unsalted butter
  • 1 pack of Digestives or whole wheat cookies (approx. 200g)
  • 100g cream cheese (room temperature)
  • 80g heavy cream
  • 60g strawberry jam or your favorite fruit jam

Cooking Instructions

Step 1

Wash the fresh strawberries thoroughly under running water. Remove the green tops and slice them in half, preparing them for beautiful arrangement on the tart.

Step 2

Melt the 80g of butter in the microwave for about 30 seconds to 1 minute until completely liquid. Place the Digestive cookies in a zip-top bag and crush them into fine crumbs using a rolling pin. It’s important that there are no large chunks left.

Step 3

Pour the melted butter into the crushed cookie crumbs and mix well with a spatula or fork until all the crumbs are evenly coated with butter. Mix until it resembles moist sand.

Step 4

Press the cookie mixture firmly into the bottom and up the sides of your tart pan. Using your fingers or the back of a spoon, pack it down tightly to create a neat shape that won’t crumble. Place the prepared tart shell in the freezer for about 1 hour to set firmly. This step is key to achieving a crisp tart base.

Step 5

Now, let’s make the tart filling. In a bowl, combine the 100g of room-temperature cream cheese, 80g of heavy cream, and 60g of strawberry jam. Whip them together using a hand mixer or a whisk until smooth and creamy, ensuring there are no lumps. Spread this smooth cream filling evenly over the firm, frozen tart base.

Step 6

Return the filled tart to the freezer and let it chill for approximately 1 hour, or until the filling is completely set and firm. A well-set filling will prevent the strawberries from sinking or shifting.

Step 7

Remove the tart from the freezer. Decorate the top with the halved fresh strawberries, arranging them attractively. You can place them closely together or get creative with your design to complete your unique strawberry tart!
