  • 200g thinly sliced beef for jeon (Korean pancake)
  • 1 handful fresh green beans
  • 2 mini bell peppers
  • 1 king oyster mushroom
  • A little olive oil
  • A pinch of salt
  • A little sesame seeds

Seasoning Sauce

  • 3 Tbsp soy sauce (jin ganjang)
  • 1/2 Tbsp sugar
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sesame oil

First, prepare the king oyster mushroom, which will add a delicious aroma. Wash the mushroom thoroughly under running water and trim off any dirt. Then, slice it lengthwise into strips about 0.5cm thick. Heat a pan with a little olive oil over medium-low heat. Add the sliced mushrooms and sauté until they release their moisture. Season very lightly with a pinch of salt. It’s important to sauté them gently to preserve their subtle sweetness and aroma.

Prepare the fresh green beans by trimming their ends and washing them well. If using frozen green beans, blanch them in boiling water for about 1-2 minutes. Be careful not to overcook them, as they can become mushy. Immediately after blanching, rinse them under cold water to cool them down, then drain them thoroughly in a colander. Excess moisture can cause the beef rolls to unravel.

Clean the mini bell peppers by removing the stems and seeds. Slice them lengthwise into strips that will match the size of your beef slices. For 200g of beef, you’ll likely get about 10-12 slices, so aim to cut the bell peppers accordingly. Using colorful bell peppers will make the rolls visually appealing and more nutritious.

If your thinly sliced beef has any excess blood, gently pat it dry with paper towels. Removing the blood will help eliminate any unwanted gamey flavor, resulting in a cleaner taste. Be sure not to press too hard, just absorb the moisture.

In a small bowl, combine 3 tablespoons of soy sauce, 1/2 tablespoon of sugar, 1 tablespoon of minced garlic, and 1/2 tablespoon of sesame oil. Mix them well until evenly combined. Then, carefully roll it up tightly from one end, similar to making a kimbap (seaweed rice roll), ensuring the filling is snugly enclosed. Avoid overstuffing, as it can make rolling difficult.

Here’s a crucial tip: When placing the rolled beef and vegetable bundles into the pan, make sure the seam side (the end where you finished rolling) is facing down. This will help seal the roll and prevent it from unraveling as it cooks. Avoid having the pan too hot, which can burn the outside before the inside is cooked.
