Essential Ingredients

  • 3 medium potatoes
  • 1/4 onion
  • A small amount of carrot
  • A small amount of green onion
  • 2 tsp salt
  • 3-4 Tbsp water (about 1/5 of a paper cup)
  • A sprinkle of sesame seeds
  • 1 tsp perilla oil (or sesame oil)
  • Cooking oil (or canola oil) as needed

Cooking Instructions

First, peel the potatoes and slice them into thin, uniform shreds. Cutting them to a consistent thickness ensures they cook evenly, resulting in a better stir-fry. Aim for shreds that are about 2-3mm thick.

Place the shredded potatoes in cold water for about 10 minutes to remove excess starch. This crucial step prevents the potato shreds from sticking together or breaking apart during cooking, and helps maintain a crisp, firm texture. After soaking, drain the potatoes thoroughly in a colander.

Slice the onion thinly. Julienne the carrot and green onion into similar lengths as the potatoes. Having all your vegetables prepped beforehand makes the cooking process much smoother.

Heat a pan over medium heat and add a generous amount of cooking oil. Add the shredded potatoes and onion. Stir-fry until the onion becomes translucent. This process allows the natural sweetness of the onion to meld with the savory potatoes, creating a richer flavor.

Once the potatoes and onions are slightly softened, add the julienned carrots and continue to stir-fry. Now, add 2 tsp of salt and about 3-4 tablespoons (roughly 1/5 of a paper cup) of water. Instead of stirring vigorously, gently toss or fold the potatoes with a spatula to prevent them from breaking. They are done when they are tender when pierced with a chopstick or fork.
