Ingredients for Jjolmyeon Sauce

  • 5 Tbsp Gochujang (Korean chili paste, generous)
  • 2 Tbsp Gochugaru (Korean chili flakes, fine)
  • 1 Tbsp Soy Sauce
  • 3 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
  • 3 Tbsp Mirin (rice wine for cooking)
  • 2 Tbsp 2x Concentrated Vinegar
  • 1/2 Tbsp Minced Garlic
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare 5 generous tablespoons of Gochujang (Korean chili paste). This forms the spicy base of your Jjolmyeon sauce.

Step 1

Step 2

Next, add 2 tablespoons of fine Gochugaru (Korean chili flakes) to achieve a deep spiciness and vibrant color. Using fine flakes will help the sauce blend smoothly.

Step 2

Step 3

Incorporate 3 tablespoons of Mirin (rice wine for cooking). This helps remove any unpleasant odors and adds a delightful savory depth. The alcohol will evaporate during cooking.

Step 3

Step 4

Add 1/2 tablespoon of freshly minced garlic. The pungent aroma of garlic will elevate the overall flavor profile of the sauce.

Step 4

Step 5

Now, for the sweetness! Add 3 tablespoons of Oligodang (corn syrup) or Mulyeot (starch syrup). You can adjust the sweetness to your preference.

Step 5

Step 6

Stir in 1 tablespoon of Soy Sauce. This adds umami and balances the flavors. Using regular soy sauce is recommended for a cleaner taste compared to soup soy sauce.

Step 6

Step 7

Add 2 tablespoons of 2x concentrated vinegar for a pleasant tanginess. If you’re using regular vinegar, you might need to adjust the amount to achieve your desired level of sourness.

Step 7

Step 8

Finally, sprinkle a pinch of toasted sesame seeds for a nutty aroma and flavor. Lightly crushing the seeds between your fingers before adding them can enhance their fragrance.

Step 8

Step 9

Combine all the prepared ingredients in a bowl. Mix them thoroughly with a spoon or whisk until the sauce is smooth, well-combined, and glossy. This is your perfectly balanced, savory and sweet Jjolmyeon sauce! ^^ Enjoy it with freshly cooked chewy noodles or bibim-guksu (spicy mixed noodles) for a truly satisfying meal!
