  • 2 strips of bacon
  • 2 Tbsp canned corn
  • Generous amount of mozzarella cheese

First, wash two large potatoes thoroughly. Use a spoon to carefully scoop out the center of each potato, creating a boat-like shape. Be careful not to scoop too thinly, as this can cause them to break. Aim for a consistent thickness.

Cut the scooped-out potato flesh into wedge shapes. To prevent browning and remove excess starch, soak these potato wedges in cold water for about 10 minutes. It’s crucial to drain them completely before frying to avoid oil splattering.

Pour enough cooking oil into a deep pan to cover the potatoes. Heat the oil to 160-170°C (320-338°F). If the oil is too hot, the outside will burn before the inside is cooked. Using a thermometer or testing with a wooden chopstick (look for steady bubbles) will help maintain the correct temperature. Fry the potatoes until golden brown.
