Ingredients- 2 medium-sized potatoes
- Pizza sauce (or tomato pasta sauce) as needed
- 1/4 bell pepper (use various colors for visual appeal)
- 1/4 onion
- 2 strips of bacon
- 2 Tbsp canned corn
- Generous amount of mozzarella cheese
- Ketchup, optional
- Sugar, optional
Cooking Instructions
Step 1
First, wash two large potatoes thoroughly. Use a spoon to carefully scoop out the center of each potato, creating a boat-like shape. Be careful not to scoop too thinly, as this can cause them to break. Aim for a consistent thickness.

Cut the scooped-out potato flesh into wedge shapes. To prevent browning and remove excess starch, soak these potato wedges in cold water for about 10 minutes. It’s crucial to drain them completely before frying to avoid oil splattering.
