Haha) Today, we’re recreating that classic diner omurice! Trying to perfectly replicate the secret recipe for those delicious sauces might be too complex, so we’re taking a simpler approach using readily available ‘high-rice’ sauce (a type of Japanese curry sauce mix). Let’s bring back those cherished flavors!
For the Sauce- 1 packet High-Rice sauce mix
- 1/2 medium onion
- 10 mini king oyster mushrooms
- 1/3 medium carrot
- 1/4 small zucchini
Cooking Instructions
Step 1
First, let’s prepare the delicious high-rice sauce. Finely julienne the onion, carrot, and mini king oyster mushrooms. We’re adding mushrooms for extra flavor instead of meat or potatoes; both king oyster and button mushrooms would work wonderfully here.
Step 2
Heat 1-2 tablespoons of olive oil in a pot over medium heat. Add the julienned onion, carrot, and mushrooms. Sauté them, stirring occasionally, until the onions become translucent and the vegetables soften slightly, about 5-7 minutes. This process brings out the natural sweetness of the vegetables.

Once the vegetables are nicely sautéed, turn off the heat temporarily. Pour in 600ml of water. Then, add the high-rice sauce powder. Whisk thoroughly with a whisk or spatula to ensure there are no lumps and the powder is completely dissolved.

Bring the dissolved sauce mixture back to a simmer over medium heat. Stir in 2 tablespoons of ketchup and let it cook for another 2-3 minutes until it thickens slightly. Your delicious high-rice sauce is now ready! Turn off the heat and set it aside.

Now, let’s make the fried rice. Finely dice or thinly slice the onion, carrot, green onions, and zucchini for the fried rice. Heat a generous amount of cooking oil in a frying pan over medium-high heat. Add all the prepared vegetables and sauté with a pinch of salt until they are tender and slightly softened, about 5 minutes.

In a separate bowl, crack the 3 eggs and add a pinch of salt. Whisk them well until combined. Lightly grease a clean non-stick pan and pour in the egg mixture to create a thin omelet. When the egg is about two-thirds cooked, carefully slide the fried rice onto the omelet and shape it into a mound.
