Ingredients

  • 1 cup pancake mix (or tempura mix / corn starch) (approx. 150g)
  • 1/3 cup water (approx. 60ml)
  • 1/2 can corn kernels, drained (approx. 100g)
  • 1/2 tsp salt

Cooking Instructions

First, drain the canned corn kernels thoroughly using a sieve. Ensure all excess water is removed, as this can make the batter too thin.

In a bowl, combine 1 cup of pancake mix (or tempura mix/corn starch) with 1/3 cup of water. Mix them together. Using tempura mix or corn starch can result in an extra crispy fritter.

Stir the mixture well to ensure there are no lumps and achieve the desired batter consistency. If it’s too thick, add a little more water; if it’s too thin, add a bit more flour. The consistency should be slightly thinner than pancake batter.

Add the drained corn kernels to the batter and mix gently to coat them evenly. Ensure each kernel is coated with batter.

Heat a generous amount of oil in a pan over medium heat. Ladle portions of the batter onto the hot pan, forming small circles. Avoid spreading them too thin, as this makes them easier to flip.

Once the bottom side is golden brown and the edges begin to set, gently press down on the fritters to ensure they cook through evenly. When one side is golden and firm enough to hold its shape, carefully flip the fritter. If flipping proves difficult, you can place a lid or plate that fits the pan over the fritter and carefully invert the pan to flip it.

Cook the other side until golden brown. Your delicious corn fritters are ready! Serve them warm to enjoy the crispy exterior and the sweet, chewy corn filling. They are also great with ketchup or soy sauce.
