Step 1
Let’s start by preparing the fresh spinach. Submerge the spinach in cold water and gently swirl it to remove any soil from the roots. Rinse thoroughly under running water until clean.

Fill a pot with enough water to cover the spinach and bring it to a rolling boil over high heat. Once the water is boiling, add 1 teaspoon of salt to help remove any bitterness and preserve the vibrant green color of the spinach.

When the water is boiling, carefully add the spinach, starting with the root ends, and blanch for about 15 to 20 seconds. Just until the spinach wilts slightly. The total blanching time should not exceed 30 seconds; adjust the time based on the amount and size of the spinach.

Immediately remove the blanched spinach from the boiling water and rinse it under cold running water to cool it down. This step helps maintain the spinach’s crisp texture and effectively removes any remaining astringency or impurities. Gently squeeze the spinach with your hands to remove excess water. Be careful not to squeeze too hard, as this can release a raw flavor.

For the seasoning, use the white part of the green onion as it imparts a fragrant and mild flavor. Finely mince the white part of the green onion. If you prefer not to have noticeable pieces, chop it very finely.

Now, let’s make the delicious seasoning. Place the squeezed spinach in a bowl. Add 1 teaspoon of Korean soy sauce, 1 teaspoon of tuna extract, 2/3 teaspoon of minced garlic, the prepared minced green onion, and 1 tablespoon of fragrant sesame oil.

Finally, add 1/2 tablespoon of sesame seeds for that nutty flavor. Rubbing whole sesame seeds between your palms or crushing them beforehand will enhance the nutty aroma. (Tip: Using toasted sesame seeds will further elevate the flavor!)
