Wash it thoroughly under running water to remove any soil. Then, chop the spinach into manageable pieces, about 3cm long. Cutting it this way helps the ingredients hold together well when frying, maintaining the pancake’s shape.

Next, prepare the king oyster mushrooms and onion by slicing them to a similar length as the spinach. For the king oyster mushrooms, remove the base and separate the strands. Peel and thinly slice the onion. Slicing all the vegetables to a similar size ensures that the pancake cooks evenly and provides a pleasant texture in every bite.

Now, let’s make the delicious batter that will ensure your spinach pancakes are wonderfully crispy! In a large bowl, add a generous amount of pancake mix.
