- Sesame seeds 1 Tbsp
- Oligosaccharide (corn syrup) 1 Tbsp
- Soy sauce 0.5 Tbsp
- Sesame oil 0.5 Tbsp
- Sesame seeds 1 Tbsp
Cooking Instructions
Step 1
First, take the dried shredded squid, which might be stuck together, and cut it into bite-sized pieces (about 5-7 cm) with scissors. This makes stir-frying much easier.
Step 2
Gently separate the cut squid shreds with your hands, shaking them lightly to loosen any clumped sections. The strands should naturally come apart.
Step 3
Next, re-cut the separated squid shreds into shorter pieces, about 3 cm long. This step ensures the seasoning coats evenly and improves the texture.
Step 4
Since dried shredded squid can burn easily due to its thinness, mixing the seasonings beforehand is convenient for quick cooking. In a bowl, combine the soy sauce, oligosaccharide, and sesame oil, and mix well.
Step 5
Before stir-frying, heat the pan on low for a moment, then turn off the heat. Add the shredded squid and 1 tablespoon of cooking oil to the pan. Use your hands or tongs to toss them together thoroughly. This coats the squid with oil, preventing it from breaking apart easily and ensuring a tender result.
Step 6
Now, turn the heat to ‘low’ and use chopsticks to stir-fry the shredded squid slowly. It’s crucial to stir constantly to prevent burning.
Step 7
Stir-fry for about 3 minutes until the squid shreds turn slightly golden and begin to soften. Then, pour the pre-mixed seasoning sauce evenly around the edges of the pan.
Step 8
Use two chopsticks to quickly and lightly stir-fry the squid to ensure the seasoning is evenly distributed. Continue stir-frying for only 30 seconds to 1 minute, as overcooking can make it tough. Be mindful not to burn the sauce.
Step 9
Finally, sprinkle generously with sesame seeds for a nutty aroma to complete your delicious stir-fried dried shredded squid! It tastes even better when it has cooled slightly.
