Making this Soboro Donburi, a special dish for clearing out the fridge, after a long time! Today, I’m adding plenty of eggplant so even my son, who dislikes vegetables, can enjoy it. Create a satisfying meal with vibrant colors and abundant ingredients.
Main Ingredients- 1 Eggplant
- 1 Cucumber
- 1/3 Carrot
- 400g Beef (for Bulgogi)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Peel the eggplant thinly with a vegetable peeler, then finely chop it into about 1cm pieces. Dice the carrot to a similar size as the eggplant. Rub the cucumber with coarse salt to clean it thoroughly, then peel it in strips (like an apple peel) and slice thinly. This helps retain the cucumber’s crispness.
Step 2
Prepare the beef for bulgogi. Pat it dry with paper towels to remove excess blood. Then, mix it with soy sauce, minced garlic, sesame oil, cooking wine, rice wine, and ginger syrup. Massage the ingredients into the beef to marinate. This marinade will make the beef tender and flavorful.

Heat a pan with a little perilla oil. Start by stir-frying the carrots until they become slightly translucent. Then, add the cucumber and eggplant and stir-fry together. It’s best to stir-fry over high heat to keep the vegetables crisp. Once the vegetables are cooked, reduce the heat to low, season lightly with salt, and spread them out to cool.

Now, let’s make the scrambled eggs. Crack the eggs into a bowl and strain them through a fine sieve to remove the stringy chalazae. This step ensures soft, fluffy scrambled eggs. Pour the egg mixture into a lightly oiled pan over low heat and stir with chopsticks until softly scrambled.

Stir-fry the marinated beef over high heat. Break up the meat with a spatula or chopsticks as it cooks to prevent clumping. This method helps evaporate excess moisture, resulting in fluffy, separated pieces of beef. As you stir-fry, use paper towels to remove any excess liquid or fat for a cleaner taste.

Once the beef is cooked, finely chop it into bite-sized pieces using kitchen scissors. Place warm rice in a bowl, then artfully arrange the stir-fried vegetables, scrambled eggs, and beef on top to complete your delicious Soboro Donburi! For an extra touch, you can sprinkle some shredded seaweed (gim) or sesame seeds on top.
